Scientists who study food have developed a system called the NOVA classification to sort foods into four groups based on how much processing they have gone through. At one end of the scale sit whole foods like apples and eggs — barely touched by industry. At the other end sit ULTRAPROCESSED foods, which are industrial creations packed with ingredients you would never find in a home kitchen. Think of things like flavored chips, packaged pastries, instant noodles, and many breakfast cereals — these are NOVA Group 4, the most heavily altered products on the market. Brazilian researcher Carlos Monteiro and his team at the University of São Paulo created the NOVA system in the late 2000s to give scientists and consumers a clearer way to describe what is actually inside our food supply. Understanding this system is the first step in investigating whether these products are genuinely harming the people who eat them.
